Hand forged from 52100 high carbon steel in a Japanese gyuto profile with an Australian hardwood handle (typically blackwood).

Our gyuto's come in three useful blade lengths (220mm knife pictured, more images to come). The blade profile has a deep heel and the edge starts with a flat section for chop cutting and transitions into a useful amount of belly. The knives are forged keeping thickness in the spine for stiffness but with a thin mid section, tip and edge for great slicing and chopping performance and good food release with minimal wedging. A pronounced distal taper is forged in from heel to tip for balance which along with a rounded spine and heel and a well proportioned handle makes for a comfortable knife to use.
